One of the primary goals of this project is to develop and increase resource sharing between universities; this includes an effort to reach under-served and underrepresented audiences, as well as to ensure that the technical food safety information shared can apply to foods from a wide variety of cultures, including diverse, underserved, and underrepresented audiences. This project also actively seeks ways to include minority-serving institutions as part of the food safety consortium.
